Rapidly gaining popularity as gourmet bush tucker, Caviar Lime or Citrus australasica, is a thorny evergreen shrub or small tree. White spring flowers are followed by dark green slender pods which turn to pink as they ripen. Inside the pods are pink ‘pearls’, like pomegranate seeds. These pearls or ‘Lime Caviar’ pop in the mouth with an intense citrus fizz which is a cross between lime and grapefruit. The Lime Caviar can be eaten straight off the tree or used to make pickles, marmalades, desserts and as an unusual addition to drinks. Citrus australasica is self-fertile and should be grown in the same way as other citrus fruits. Height: 300cm (10 feet). Spread: 250cm (8 feet).

They will take time to mature and produce fruit, but are wonderful, classy plants in their own right with the additional bonus of intense scent throughout the year and especially winter. Hardy to 5°C, they are best grown outdoors from May to October, and brought inside for the winter.
